Vinification

Vinificazione in bianco con criomacerazione delle uve ad una temperatura di circa 5°C per permettere l'estrazione degli aromi primari dell'uva, che sono presenti nella parte interna della buccia. Un 20-30% del vino base è sottoposto a fermentazione malolattica facendo così guadagnare al vino maggiore complessità e ricchezza. Per l’avvio della fermentazione si utilizzano ceppi di lieviti autoctoni appositamente selezionati dal consorzio del Lison DOCG. Prior to start fermentation, the grapes undergo a cold maceration on the skins for around 24 hours at low temperature around 5°C to enhance extraction of aroma and flavor compounds, improving the overall quality of the wine produced. 20 up to 30% of the wine completes the malolactic fermentation to grant the wine more complexity. The fermentation is started with autochthonous yeast specially selected by the Lison DOCG consortium.
