Combinations

Excellent to accompany cold cuts appetizers, especially raw ham and seafood appetizers. It pairs very well with first courses with vegetable or fish sauces, white meats and baked white fish.

Harvest

Manual harvest, destemming and soft pressing of the bunches.

Vinification

Cryomaceration for 24 hours at 5°C to extract the primary aromas from the skins. The must is then fermented at 14-16°C with selected yeasts for 8-14 days.
