The traditional red wine vinification with skin contact takes place after a period of 30 days where the hand-picked grapes are left to dry to concentrate aromas and structure. The grape crushing takes place every year always on the 23th of October.
The wine ages at least 18-24 months in 50 hl French Tonneaux and refines in the bottle for another 6 months before being released.
