Vineyard
80% Glera - 20% Chardonnay
Vinification
The two grapes are vinified separately. The Chardonnay undergoes a 24-hour cryomaceration at 5°C to extract the pectolytic enzymes, followed by fermentation at 14-16 C° for 8-14 days. The Glera is harvested early to enhance the acidity. Fermentation occurs at a temperature of 16-18 C° for 7-10 days, until reaching a sugar level of 12-14 g/L. The Chardonnay is blended with 20% Glera.
